Dishoom

Case Study

In September 2009 StuArt Consultancy Ltd were commissioned to provide Cost Management and Architectural Design services for an exciting new restaurant concept Dishoom.

Working from concept visuals and brand documentation prepared by designer Afroditi Krassa, our role was to transform a developer's shell unit into London's First Bombay Café.

Deploying the practices many years of experience we developed general arrangement drawings of the ground floor and basement areas, which included space planning the location of key elements such as the, kitchen counter, customer staircase, disabled platform lift, toilets etc.

Our Architectural Design Services role encompassed the production of drawings for the Licensing application, all necessary drawings and details for Building Regulation approval, co-ordination of the ceiling layouts with the lighting designer and HVAC designer, design & detailing of the front of house staircase and design and detailing of all bespoke manufactured items such as the upholstered fixed seating, solid oak wall paneling, bar counters, waiter stations, decorative screens etc.

During the drawing development stage of all manufactured elements Value engineering and consideration was given to construction methods and material specification in order to derive an optimum balance between cost 'v' use.

The dramatic 3D porcelain tiled floor is an example of our practical approach to problem solving and delivery of this iconic feature.
